Here’s a total last of the summer LULZ / hot-hot summer salad to make before the new season sets in. If you’re not vegan, watermelon and feta salad is a total Pinterest cliche, sure, but if, like me, you’ve only just found how great Sainsbury’s Greek-style cheese can be (also Bute Island’s Greek-style cheese), then this salad is THE BOMB and you need it in your life.
Make this as dinner for two with Turkish pide bread and homemade hummus, or add to a larger table with lots of different small plates… I took a box of this to the park to see my friend Stevie and we used bits of pide bread to mop up the salad dressing with - perfectoooo!
Watermelon, quick pickled red onions, vegan feta and mint salad
Serves 2 or 4 as part of a larger meal
1 red onion
Juice of two limes
2 tbsp white wine vinegar
Salt and pepper
Handful of mint
1 packet of Greek-style vegan feta
Around 500g watermelon
1. Using a mandolin, a food processor, or a very sharp knife, cut the red onion into as small slices as possible. Place in a bowl, cover with the lime juice, vinegar, salt and pepper, and cover. Leave in the fridge for an hour if possible- fifteen minutes at the least.
2. Chop the mint, feta and watermelon into bite-size pieces and add to a serving bowl.
3. When the onions have softened, drain them of the lime juice, add them to the salad bowl, and drizzle the whole thing over with olive oil.
4. Serve straight away!
