This banoffee pie is probably one of the trickier things to make from the recipe card selection, but it's also one of the most kitsch and absurd. Presenting this to anyone that doesn't think vegan food can be decadent or OTT is always a means to an end in my opinion!

The trick with this banoffee is to make the components a day before, get up early and construct it, then leave it a few hours in the fridge again to set. It might sound like a faff on but if you think of how un-vegan a standard banoffee pie is, it’s worth it for the creation alone.
