Disco cauliflower florets add a little sass and punchy flavour to add wintry dish you're preparing. I love having a jar of these on hand to add to a side salad with a lentil dhal, or mixing into a winter slaw. Similarly to the pink pickled onions, they add crunch, tang and colour and are a great way of turning a midweek dinner into something with more pizazz. Like getting lost on the dance floor on a Tuesday night.
