Mac No Cheese with Chilli and Basil
Mac and cheese was the first thing I craved after going vegan and the first vegan recipe I followed that went really wrong for me: soaking cashew nuts at my office desk only to cycle home with them and create One Holy Mess. But it's actually easy enough to make with a veganised roux sauce and a bit of product know-how. I add shredded basil and chilli to mine for extra colour and flavour.
You can make huge vats of this up for something comforting at a summer cook-out (in case the inevitable happens and it tips it down). This recipe is also a fave with the Generic Greeting crew I love cooking for, and is dedicated to Stevie. < 3
