This stuffed seitan roast is a new favourite- I started practising this recipe for the winter crochet retreats as a way of having a vegan centrepiece for winter dinners. It takes a little time, but as with all those things- the added effort is worth it. The fennel seeds fill entire houses with a wonderful festive smell and once you get the timings down, the rest of your roast can fit in around this as it bakes away in the oven. A total festive delight!

Please note: The roast is the only recipe in the collection to be printed on two pages as I didn't want to cut any of the process out, so is sold for £3 instead of £2.
