Compote is my favourite way to use up over-ripe fruit. Crumble is of course the ideal, but often I might only realise on the final day of fruit being good to eat that it needs using up, and crumble takes some organisation. Compote, on the other hand, is pretty much always possible to make.
Makes enough for two
All the fruit that needs eating
50ml orange juice (optional)
Cinnamon, vanilla, lemon zest or cloves, or anything else you want to flavour the fruit with.
De-stone the fruit, place in a pan and cover over with water. I like to add about 50ml of orange juice and maybe a teaspoon of sugar- the older the fruit the sweeter it will be, so you may not need any sugar.
Allow to simmer until the liquid reduces into a syrup, and pour into mugs or bowls. Perfect with granola, to top off porridge or some french toast!
