When good waffles happen to hungry people: gluten free, vegan waffles with Ruth

I ran all the way to Ruth's flat last week, partially because that's what I'm trying out at the moment, but mainly because I was just too damn excited to wait another minute for vegan, gluten free waffles. 

The excuse behind the waffles was to try some of the amazing new products Ruth's been making as part of her business in gluten-free, vegan snacks. I mentioned this before back in my November round-up but since then there's a bunch of new products Ruth is working on and can I just say they are the tastiest things I've ever eaten. Snacks isn't really the word for what Ruth makes, because they are basically BITESIZE LIFE AFFIRMANCE. But that sounds douchey, so I'll just say her homemade Nutella has caused a paradigm shift in my outlook on everything. I didn't know I could feel this strongly about anything involving chocolate, but stick it on a waffle and suddenly EVERYTHING CHANGES BUT YOU, HOMEMADE NUTELLA. Her business is still in a naming process... it's sort of runaway with itself before things like names and websites and Twitter managed to get involved- but when it does, I can't wait to share more about it.

Ruth's homemade Nutella, blackberries, coconut yoghurt and blood oranges. I also managed to try out maple syrup, almond butter and cinnamon. The recipe below is one Ruth adapted to be gluten free from the Art of Dessert.

Makes around 8 waffles 

Ingredients

3 cups gluten free plain flour

2 tbsp baking powder

1-2 tbsp unrefined brown sugar  

1/2 tsp salt

3 cups sugar free almond milk

1/3 cup orange juice

1/3 cup coconut oil (plus more for cooking with)

1 tsp vanilla extract

Preheat the waffle maker- Ruth set it to ‘crispy’ (anything with a ‘crispy’ setting is always going to be a dream right?) In a mixing bowl, combine all the ingredients until smooth.

Grease the waffle iron with coconut oil, then pour in the waffle mix and cook until just crisping up and a dark brown colour.

Keep the other waffles in the oven as you go, and you should end up with a light, crispy stack of waffles that are totally gluten free and vegan i.e. MAGIC.
