A long-overdue post to say the least! I can't believe we're in March... what's happening? This butternut squash soup recipe was my first for Spindle Magazine. I was looking for a different take on the detox/cleanse vibes that always pop up again in January, so this soup has all the components of something ultra- health-giving (kale, pine nuts, and miso paste) but I've also added fried breadcrumbs and a ton of olive oil to make it a bit more indulgent and obviously up the comfort factor. I knew I was on to a winner when, after finishing taking a few photographs for the article, I handed my boyfriend a bowlful to eat, and he said I should 'put this one online'. He's never said that before, so I took it as a good sign.
