You know how to spot a best friend? Someone you can sit for two hours in a park with talking about SANDWICHES. Now I don't want to ruin *that* surprise, because my word it's exciting, but let's just say the world might not be bereft of sandwich gif parties for much longer.
In any case, all that talk of bread and co. got me thinking about the fact I don't think I've EVER featured a sandwich recipe on Guac, and probably because I don't eat them enough. Sandwiches are way existential AND underrated. They're also some of the most pun-able food groups out there.
When you've been on the vegan wagon a few months it may feel like the only sandwich people want to offer you is HUMMUS/ AVOCADO/ MAYBE SOME HUMMUS RIGHT? But there's plenty more to play with than a bit of tahini. So here's three sandwich ideas for super quick summer dinners. Maybe we should all get sandwiches round for a late one a bit more. They involve a bit more prep than a PB&J but if you make two batches each time you'll even have lunch. WHAT'S NOT TO LIKE?

Club Vegan Sandwich with Smoked tofu, vegan mayonnaise and avocado slices
This guy needs a bit of prep beforehand but makes an ace late-night snack AND lunch the next day. Lightly fry slices of smoked tofu so they go crispy on the outside and then soak off the oil by laying on kitchen roll. Toast two slices of bread, then spread on vegan mayonnaise, a few salad leaves, maybe a little ketchup, and the tofu and avocado slices. Top with a cocktail stick if you're feelin' fancehhh.

I know it's good! I've been making this all week because I broke my oven so I can even confirm you can do this purely via the power of a microwave! Wrap a frozen veggie burger in kitchen roll and microwave for 4 minutes, stopping in-between to turn over. In the mean time, spread homemade beetroot hummus (recipe here) over the centre of the wrap, followed by some sliced gherkins and some rocket or basic salad leaves. Top off with slices of the veggie burger and wrap it up!
Burnin' like a (chilli dog) heatwave
This is one to bust out if you have leftover chilli on the premises. Secure said chilli within you sights. Track down a sub roll or mini baguette, and some vegan cheese and natural soy yoghurt. Fill the roll with chilli, then grated cheese, and maybe even some jalapeños. Grill for just a few minutes, so the cheese begins to melt and it's all a bit warmer. Then take out the sub and side-line with shredded lettuce and natural soy yoghurt.
