As much as it's probably not all that kewl to share a glorified sandwich recipe, "I made a nice thing and you can appreciate that if you want to", I guess is my vibe behind this post.
This week I came back to York to work on a project I've had under wraps for a few months - but in a way I'm hoping will be for the best, it's been delayed by a week. So instead, here's a falafel open sandwich I put together for eating just before another shift again. Delays make the heart grow stronger, and all that.
I won't do a recipe because this was more of an assembly job, but it involved baking falafels, baking the naan bread or flat bread you have for a few minutes (or leaving it for a few minutes in a hot oven turned off), shredding some carrots and red cabbage, chopping up some mint and cucumber, and adding anything else you fancy.
