Summer whizzed by without me being able to announce this properly on here (I did mention it on my Insta, of course): I've been working with new vegan magazine Cook Vegan on putting together some exclusive recipes for them- and you can imagine how stoked I was to find out the first batch was a Mexican Feast!
Cook Vegan is a sister magazine to Vegan Life, which has been around a little while longer, and it's so great to see these publications finally popping up. When I first went vegan there was nothing like this- now there are loads to choose from and I couldn't wait to get involved with contributing some recipes.
I worked with Meriel Armitage from Club Mexicana to put five or so recipes together- and I thought I'd share a few of the behind the scenes photos from the day- it was so much fun making a feast table crammed full of alllll the Mexican delights I could think of. These are very much #fromthecuttingroomfloor shots- so please excuse the mess, but I couldn't not share them, and anyway, it was great to make a bit of a mess and spend some time styling this food.
This was for the September issue so is no longer in shops- but the good news is the latest issue is now out, and that's also got a batch of exclusive recipes I've worked on too- head over to the Cook Vegan website to find out where you can pick up a copy.
