Dinner in daylight would be the annual celebration I’d add to March if I got to decide these things. It’s one of my favourite points in the year- suddenly realising you can finally drink a glass of wine in your flat with your best mates at 5pm (or leftover champagne from the day before, as we did tonight) in daylight. Dinnertime in daylight isn’t quite here, but it’s on the way. Arrival imminent.
Black beans and fresh corn were just what I fancied today, currently riding the tail end of a cold right outta town and off into the distance. So I found a bowl and piled in rice, chipotle beans, kale, fresh corn, red peppers, sliced avocado, sliced radishes, tomatoes, Sainsbury’s vegan feta, purple radish cress and some chimichurri. Alongside a good, healthy amount of hot sauce to douse everything in the minute these photos were taken. I sat and ate it without a screen for company, instead facing the sunshine, and felt the calmest I have in months.
