Dhal is one of those vastly underrated dishes you can always get better at. I spent a few months on 2015 getting absolutely obsessed with creating the best dhal I could for the first Poppadom Preach. After over ten attempts, I arrived at this recipe for smoked coconut dhal, which has a few tricks and tips for getting a super rich lentil consistency without using ghee, as well as achieving that tricksy smoked flavour.
